Fiori di zucca fritti • 20 squash blossoms • 7 oz all-purpose flour 200 gr • 1 egg • 1 tbs evoo • frying oil to need • salt and pepper to taste • 1 1/3 cup sparkling water 310 ml Preparation In a bowl, mix the flour with salt and pepper, add the egg . Once you have a fairly smooth mixture, dilute it by slowly adding sparkling water and continuing to stir until the batter is smooth. Fold in olive oil Carefully wash the squash blossoms removing the pistil, drain and gently dry them using paper towels. Place a large pan on the heat and add enough oil to completely cover the blossoms when frying. In the meanwhile, dip the squash blossoms in the batter, turn them gently and, when the oil is hit fry them, a few at a time. Once nicely golden, drain them on paper towels.
