Summer Holiday Breakfast Ideas 🥞
Not much I can cook at the moment as I had a nasty burn to my hand ❤️🩹 but here are a few breakfasts we have eaten holidays ☀️ As the Summer draws on I know inspo can a feel a million miles away... especially after the hundredth breakfast time 🙄 So here are some ideas to keep you going 💥
1. BANANA PANCAKES 🥞
350g self-raising flour
1 tsp baking powder
3 very ripe bananas (I used 4)
2 eggs
1 tsp vanilla extract
250ml whole milk
butter and veg oil, for frying

Mix the flour and baking powder in a bowl. In a separate bowl, mash ripe bananas with a fork until smooth, then whisk in the eggs, vanilla extract and milk. Combine the wet ingredients + whisk together make the batter. Cook the pancakes 2-3 mins a side, keep warm in a low oven, or serve.
2. BLACK BEAN, AVO & CHEESE QUESADILLAS 🥑
1 tin black beans drained
4 wraps
2 avocados, peel, cube and combine with lime juice
150g pre bought grated mozzarella
4 spring onions finely diced

Place a frying pan and heat over a medium heat, warm a wrap on both sides 30 secs a side - until soft. Add 2 tablespoons of black beans, 2 tablespoons grated cheese, spring onions and avocado. Then press the warmed wrap over/ or in half. You want enough cheese to melt and “glue” the wrap together. You then want to turn the quesadilla over to toast it on both halves. Remove the quesadilla, when you feel both sides are crisp and the cheese has melted. Place on a chopping board and cool a little before cutting into quarters. Serve warm and with chilli sauce for the adults.
3. OAT & BERRY CRUMBLE 🍎
(My sister made this one but here is my version which I use all the time..)
6 apples, peel/ core/ dice
150g blackberries or frozen berries
1-2 tbsp brown sugar
250g oats
3 tablespoons butter OR coconut oil, melted
2 tbsp maple syrup/ OR brown sugar

Preheat oven 180°C. Prep the apples and berries, add to an oven proof dish: depending on the sweetness of the fruit 1-2 tablespoons brown sugar. Prep the topping: melt the butter, or coconut oil and combine well with the oats and maple syrup. Cover the fruit with the oat mix and bake in the oven for 20-25 mins. Serve.
