This bolognese is what’s getting us through the winter blues! The secret ingredient...a cup of local Ontario milk! And the longer you simmer it, the creamier that bolognese gets. Serves: 4-8 Prep time: 10 minutes Simmer time: 3-6 hours Special tools: Really nice pot Ingredients: Bolognese 3 tablespoons shallots, diced 3 tablespoons carrots, diced 4 cloves garlic, sliced 3 tablespoons celery, diced 3 splashes olive oil 1 lb ground pork 1 lb ground beef 3 tablespoons tomato paste 1.5 cups Ontario whole milk 1 cup white wine 1 tin best tomatoes you can buy 1 jar purée tomatoes 2 bay leaves 1 kosher salt 6 twists black pepper 1 parm rind Pasta Rigatoni, cooked Garnish Parmesan cheese, grated Method 1. Sauté vegetables in olive oil. 2. Add beef and pork to the pot. Stir until they break down into little pieces. 3. Add tomato paste and develop colour. 4. Deglaze with one cup of milk that contains 15 essential nutrients that support good health. Reduce 5. Then add wine and reduce. 6. Add tomatoes, bay leaves, parm rinds and season. 7. Simmer for 3-6 hours and break down the tomatoes with a spoon. 8. Add some sauce to a pasta pan and simmer. Hit with pasta water to get the huggable consistency with your favourite pasta. 9.
