Slow cooked then seared over the @jealousdevilcharcoal, I like mine super crispy(the only way to go) salsa was simple 3 tomatoes 2 jalapenos 1onion 1cerrano pepper 3 garlic cloves salt to taste. This salsa would be amazing on a mortar and pestle. But hey we are going for quickness here. Short ribs were deboned and chopped. Served over crunchy corn tortillas loaded with melted Oaxaca cheese.
