SPAM® Buchu Jeon with leeks! I love that my mom’s recipe is versatile and just as delicious, especially when adding in what’s in season. This time of year, it’s leeks, and they’re at their peak, so I’m tossing them right into the batter with the mainstays, SPAM® and buchu (korean chives).
