The first time I ever made them was actually on our wedding day. Spencer and I came back from the courthouse and threw a little “surprise we just got married” party in our apartment with tacos and pie... and that was the whole celebration 😄💖 still can’t believe that was almost a decade ago and honestly I wouldn’t change a thing!!
I’ve been wanting to make tortillas from scratch again ever since so this weekend we hosted a cozy taco night at home. Made the corn tortillas fresh and threw together a few toppings. The chipotle lentil filling (last pic) turned out way too good not to share.
CORN TORTILLAS
makes 12 small tortillas
2 cups organic masa harina
11⁄2 cups warm water
1⁄4 tsp sea salt
1. Mix masa, salt, and water until dough feels like playdough.
2. Let rest for 20-30 min, covered.
3. Divide into 12 balls. Keep covered.
4. Press between parchment using a tortilla press.
5. Cook on a hot dry skillet for 40–60 sec per side.

SMOKY CHIPOTLE LENTIL TACOS
double the recipe for leftovers 👌🏼
1 cup cooked lentils (green or brown)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp smoked paprika
1⁄2 tsp cumin
1 chipotle in adobo, finely chopped (or 1⁄2 tsp chipotle powder)
1 tbsp tomato paste
1⁄4 cup vegetable broth or water
1 tbsp lime juice
Salt to taste
Sauté onions and garlic in olive oil until soft. Add lentils, spices, chipotle, and tomato paste. Stir in broth and let simmer for 5 minutes until thickened. Finish with lime juice. Serve with avocado, cilantro, and pickled onions.
