a healthy and comforting meal with this BIBIMBAP š„¢perfect way to get some veggies in while satisfying those cravings for korean flavours. this dish is really flexible and you can add or remove ingredients according to your preference. and you can exclude meat to make it vegan as well. Undeniably bibimbap sauce is the real star of this dish as it wouldnt be bibimbap without the spicy sauce right? Thatās why i always eat my bibimbap with a big spoonful of bibimbap sauce, mix it all up with a spoon and dig in!
Ingredients: (2 servings)
ā„carrot
ā„zucchini
ā„beansprout
ā„spinach
ā„ 125 g sliced beef
ā„ fried egg
ā„ 2 cup cooked rice
Beef marinade:
ā„ 1 tbsp soy sauce
ā„ 1 tsp sesame oil
ā„ 1 tbsp brown sugar
ā„ 1 garlic cloves, minced
ā£
Bibimbap Sauce:
ā„ 1/2 tbsp sesame oil
ā„ 2 tbsp gochujang paste
ā„ 1/2 tbsp sugar
ā„ 1.5 tbsp water
ā„ 1/2 tsp vinegar
Method:
1 marinate the beef in a bowl for at least 30 minutes.
2 mix together the seasame oil, gochujang paste, sugar, vinegar and water in a bowl then set aside.
3 finely chop zucchini and carrots
4 Heat over medium high heat, then add in the carrot. Season with salt and sauteĢ for 2-3 minutes, until lightly softened. Repeat the same steps for zucchini.
5 blanch spinach then squeeze out excess water by hand
6 season the spinach with a pinch of salt and a drop of sesame oil
7 repeat step 5 and 6 for beansprouts
8 Assemble your bowl with rice at the bottom and the rest of the ingredients on top.
5 Drizzle with sesame oil to taste.
6 finish with a fried egg on top and enjoy the bibimbap with the sauce mixture!
