Spicy whole grain linguine with olives and mushrooms
1 box @barillaus WG linguine
4 tbs evoo, divided
1 garlic clove, chopped
TT red pepper flakes
8 oz bottom mushrooms, divided
1⁄2 cup green olives, pitted and sliced
1⁄2 cup black olives, pitted and sliced
1⁄2 cup parmigiano cheese, grated
1 tbs Italian parsley, freshly chopped
TT sea salt
Place a pot of water to boil; cook pasta according to directions. Meanwhile in a skillet gently infuse red pepper and garlic with 1⁄2 olive oil over medium heat. When oil starts frying turn heat up and add mushrooms, season with salt and sautee until slightly brown. Stir in 1 1⁄2 cup pasta cooking water and keep cooking for 5 minutes. Drain pasta, toss with mushrooms and alives over high heat. When water is totally absorbed and pasta is perfectly cooked turn off heat and stir in cheese and parsley before serving #pasta #mushroom #healthydiet #wholegrain #olives
