Replying to @Jessika episode 4 of ‘make it heart healthy’ is a roasted red pepper and goat cheese sandwich with mushrooms, onions, and arugula with a drizzle of fig glaze! 🥪🧀 recipe 1. preheat oven to 450F 2. cut one red bell pepper in half and remove its seeds 3. drizzle 1 tsp olive oil over red bell peppers and place onto a parchment lined sheet pan 4. place into the oven to roast for 25-30 mins until soft and blistered 5. while the bell pepper cooks toast 2 slices of multigrain bread, and heat a frying pan with olive oil spray 6. add 1/4 cup sliced mushrooms and 1/4 small yellow onion cut into slices 7. sauté for 5-8 mins stirring continually, then add 1 tbsp balsamic vinegar and cook the veggies for another 3-5 mins 8. add 1 tbsp goat cheese in a thin layer to 1 of the slices of bread 9. then add the roasted bell peppers, mushrooms and onions, and a handful of arugula 10. drizzle fig glaze onto the arugula and lastly top the sandwich with the second piece of bread 11. wrap in parchment paper to keep the ingredients from falling out, cut in half and enjoy! #miga #hearthealthy #healthysandwiches #bellpeppersandwich #registereddietitian
