Sizzling Oil Pesto & Burrata đ Follow @foodmymuse for more recipes! Also, Iâm using the term pesto loosely here for obvious reasons but trust me...these flavors are insane and such an easy dish to prepare!
Tip: hand chop the ingredients to get contrasting textures â¤ď¸.
Ingredients:
â˘3 mini burrata balls aka baby burratas (Di Stefano).
â˘20-25 basil leaves (smacked for maximum flavor and smell).
â˘2 tbsp chives.
â˘10-12 fresh oregano leaves.
â˘3 tbsp toasted pine nuts.
â˘1/4 c olive oil.
â˘1/2 garlic clove (trust me, a little goes a long way)
â˘crushed red peppers to taste.
â˘parmigiano reggiano to taste.
â˘zest of 1 lemon + tiny squeeze of it.
â˘seasoned salt to taste.
â˘baguette.
Directions:
1.- chiffonade the basil, finely chop the chives and oregano.
2.- chop the toasted pine nuts to desired size, I like them small but big enough to get a bite.
3.- add the herbs to a bowl with the pine nuts, crushed red peppers, salt and parmigiano. Zest the lemon and add a tiny squeeze of juice. Grate the garlic.
4.- heat up the olive oil in a pan for a couple minutes, do not boil or let it smoke. Turn it off when the back of a wooden spoon slightly bubbles.
5.- mix the dry ingredients together and add the oil.
6.- place burratas in a bowl and add the âpestoâ on top while still warm and enjoy.
