I hate the notion of “elevating” a cuisine. Putting fancy flowers on a dish typically doesn’t make it taste better (I’ve done this). Buying nicer plates won’t make the food taste better (I’ve done this too). To use the term “elevate” means we don’t think highly enough of the cuisine we are trying to describe, like saying someone is “articulate”. Traditional food is more thoughtful than contemporary because it stands like a mountain in a turbulent sea of technique. All art started as contemporary art, and it’s the same with cuisine. I believe in traditional food. I like serving it. I like relaxed dining atmospheres.
