The perfect anti-inflammatory dinner btw 🫑🥩🍅 STUFFED PEPPERS -4-6 bell peppers -1 package lean ground beef -1 yellow onion -1 can diced tomatoes - 1/2 package of taco seasoning- I used @Siete Foods - 1 cup cooked rice - 1/2 cup mozzarella cheese (more to taste) - salt and pepper -optional- top with chopped parsley, lettuce, avocado, sour cream, etc Chop tops off peppers, cover in avocado or olive oil, and bake at 425 for 10 mins. Meanwhile cook the onion until golden and add the beef. Cook beef down for about 5 minutes and add tomatoes, seasonings, rice, and cheese at the end. Add beef mixture to hallowed peppers, top with more mozzarella, and cook for another 15 minutes in the oven.
