Bring to a gentle simmer and cook the chicken thighs in low heat for about 20 minutes. Remove the chicken thights and set aside. Scoop out some chicken broth to cook the rice. Rinse the rice and cook it with the chicken broth instead of water. Add a drizzle of sesame oil for extra aroma. To the remaining broth, remove scallion and ginger. Add mushrooms and winter melon.
