Perch with yellow and red tomatoes from @ixta.belfrage fantastic Mezcla. This was easy and delicious fish meal! Oven cooked perched served on sweet and juicy tomatoes topped with chilli and garlic butter. All this prepared in 20 minutes.
Tomatoes were sliced and arranged on a serving plate and set aside. Next the Chilli and garlic butter was prepared by frying sliced red chilli for 2 minutes until it was still red and crispy. When taken out of heat crushed garlic was added to the oil-butter mixture. Then perch fillets were seasoned with salt, placed in oven and grilled for couple of minutes depending on how big your fillets were. Mine were approx 60 g each so it Toom 3 minutes to get them ready. When the fillets were grilled they were placed on the top of the tomatoes and lemon was squeezed on top of them. The dish was finalished with chilli oil butter, flaked sea salt and basil. I made this some time ago when the weather was still warm and sunny and we had it with tasty new potatoes. Wonderful meal altogether! Have great Friday everyone! ❤️
