Sausage and charred citrus traybake from @ixta.belfrage Mezcla. Another easy and tasty meal from this marvellous book. Here roasted veggies and sausages meet lovely citrus flavours and cold cucumber salsa. Wonderful taste! Peeled and chopped carrots, onion wedges, chillies, peeled garlic cloves and sausages were mixed together with ground cumin, olive oil, maple syrup, salt, chipotle and red bell pepper flakes snd roasted in the oven for 35-40 minutes. Meanwhile the vegetables were roasting in the oven lime, lemon and tangerine halves were charred on a frying pan for 3-4 minutes until nicely browned. Peeled cucumber was chopped and mixed with lime juice, olive oil, salt and fresh herbs. When vegetables and sausages were ready everything was transferred to a serving plate, charred citruses were squeezed over the vegetables and sausages. Finally some cucumber salsa was spooned over and rest served aside. I served this with toasted bread and green salad. It was very tasty and loved to soak the toasted bread to the fantastic juices from roasted the veggies and the citruses. Delicious!
