📸 @steak_calm_lettuce_eat Cold days is a good excuse for carb. Do you like mantou (Chinese steamed bun), a staple food? In northern China, mantou is also a festive food for lunar new year. With new year around the corner, we make it special - ube spiral mantou, steamed & deep fried🤩 We dip them in condensed milk. Every bite is so soft warm sweet. If deep fried, it's crispy outside & delicate inside😋

Steps⬇️
1. For ube dough: peel & steam ube 20 to 30 mins or till soft. Smash it in a bowl to small pieces. Blend ube & 66g milk till smooth.
2. For plain & ube dough: in a bowl, heat milk in microwave for 15 to 20 secs. Add sugar (1 tsp for plain dough or 1/2 tsp for ube dough) to milk. Mix well. Add yeast. Give it a stir. Cover & let proof 10 mins.
3. For plain & ube dough: in a mixing bowl, mix flour, sugar and salt. Add milk yeast mixture and oil. Add ube to ube dough. Mix well to form dough. Knead by hand or machine till dough is smooth. Cut each dough into two equal parts.
4. Roll a plain and ube dough on a floured surface separately into a thin 33x25cm rectangle.
5. Spray a bit water over plain dough. Align & place ube dough on it. Press both dough slightly with a rolling pin. Spray a bit water all over ube dough. Pinch one long end thinner with fingers. Roll dough tightly from the other long end into a 4cm diameter log. Cut end pieces. Cut log into 4 cm long pieces. Put each piece on a small piece of parchment paper, seal side down. Put them in a container with space in between. Cover & let proof till 50% bigger (about 1 hour at room temp). Repeat till Steps 4 & 5 till dough is done. Finger test to see if it’s perfectly proofed: when pressing mantou with a finger, it leaves an indentation & springs back slowly.
6. Bring water in a pot to a boil. Place mantou on a steamer above water. Wrap a towel around lid. Cover with lid. Lower heat to medium. Steam 12 to 15 mins. Turn heat off. Keep lid closed 5 mins to prevent shrinking. Open lid & enjoy it with condensed milk.
7. To deep fry, heat some oil in a pot till hot. Add steamed mantou. Fry till golden brown. Press & turn them for even frying. Transfer them to
