Each and every Indian state I’ve travelled I’ve somehow come across a story of something smoked, and this one is no different The Velips are masters in their own way! They belong to the aboriginal communities of Goa and have been agrarians all their lives. I picked up this recipe when I was invited to their homes for a meal and was amazed with the flavours! I should admit that I am not a very big fan of eggplant but this one blew me away! Earth flavours is what I could describe it as.
