Peppered chicken and pickled watermelon salad from @ottolenghi @guardianfeast Guardian food column (19th Sep 2022). This was wonderful light lunch yesterday. Absolutely loved the combo of sweet, savoury and sour. The watermelon had a such amazing flavour from pickeling it in vinegar-sugar-water liquid which was flavoured with mint leaves, jalopenos and camomille tea bags. Preparing this recipe started already the night before as the watermelon needs to pickle overnight. And yes that yellow thing in the jar is watermelon which I didn’t buy intentionally. You can image my face when I was cutting the watermelon into cubes. 😮🙈 The cubed watermelon was placed into a sterilised jar together with sugar, sliced jalopeno, vinegar ( I used rhubarb), camomille tea bags, mint leaves, salt and pepper and placed in the fridge overnight. The next day the preparation started with chicken thigs which were first sandwiches between greaseproof paper and bashed it out to 1/2 cm thick. Next they were coated in crushed peppers, salt and flour mixture. Then fried on a hot oil until ready and set aside. After frying the chicken some watermelon pickling liquid was poured into the pan and simmered for 5 minutes until it turned syrupy. Rocket, thinly sliced shallot and drained watermelon was mixed together with the cooked pickling syrup and then transferred to a serving plate. Fried chicken was cut into chunks and spread on the serving plate. The salad was finalised with crushed peppers and drizzeled with remaining syrup. Super delicious and absolutely loved the flavour of the pickled watermelon. Definately something to make again. We had this wonderful salad with toasted bread to mob all the reamaining flavours from the plate.
