Replying to @Erin Louise episode 8 of ‘make it heart healthy’ is a ricotta and pear sandwich with fresh mint 🌱🍐 recipe (makes 1 serving) 1. toast 2 pieces of multigrain bread (I used the seeduction bread from whole foods) 2. add 2 tbsp part skim ricotta to one side of each slice of toast 3. season with red pepper flakes and fresh ground black pepper 4. top one side of the ricotta toast with 6-8 thin slices of pear, a thin layer of sliced cucumber, and a handful of arugula tossed lightly in 1 tbsp balsamic vinegar and 1 tsp olive oil with fresh ground black pepper 5. top the other side of the ricotta toast with 1 thinly sliced radish and 4-5 fresh mint leaves 6. wrap in parchment paper, cut in half, and enjoy! nutrition per serving: 310 calories, 10g protein, 41g carbohydrate, 11g fat, 2g sat fat, 3.5g fiber, 360mg sodium.
