I’m not ready for summer to be over yet, are you? It’s still very hot here and I have a couple of summer recipes I want to share with you guys ☀️☀️ like this heirloom caprese and pesto salad. For the pesto you need: 50 g basil leaves 1/4 cup walnuts/almonds or pine nuts 1 garlic clove small 1/4 cup GRANA PADANO 1/4 to 3/4 cup of EVOO Salt and pepper To make the pesto use a mortar and pestle or a food processor. First blend the garlic clove, walnuts and basil leaves until almost puréed. Add the cheese and drizzle the olive oil bit by bit until it’s all blended. Season and use or refrigerate.
