#ad SUPER SPEEDY SWEET POTATO GALETTE RECIPE đźŤ
Believe it or not, I don’t actually cook elaborate food all of the time. This year, I want to make an effort to share more recipes like this one. Quick, easy, and delicious dishes that anyone can whip up at home.
For this galette recipe, @us_sweetpotatoes take centre stage. These are one of my main cooking staples as they are affordable, easy, and versatile to cook with.
American sweet potatoes and goats’ cheese are a match made in heaven, but you can easily omit or substitute the cheese to make them vegan and they will be *almost* as delicious.
INGREDIENTS:
* 1 medium American sweet potato, cut into 3mm slices
* 1 tbsp olive oil
* Salt & pepper
* 1 sheet ready-rolled puff pastry
* 1 egg, beaten
* 1/3 cup caramelized onion relish
* 100g soft goats’ cheese (omit to make vegan)
* 1 tsp chilli flakes
* Handful of rocket leaves
DIRECTIONS:
1. Preheat the oven to 200°C/ 392°F.
2. Toss the American sweet potato rounds in a large bowl with oil, salt, and pepper. Arrange the sweet potato on a baking tray and bake for 15 minutes.
3. On a lightly floured surface, cut puff pastry sheet into 8 rectangles. Brush pastry with egg wash.
4. Spread each rectangle with caramelized onion relish, leaving a 1cm border. Top each with sweet potato rounds and dollop with goat’s cheese. Bake for 20 minutes, or until pastry is puffed and golden. Allow to cool for 5 minutes before topping with rocket leaves.
5. Serve immediately or at room temperature.
