Pan-fried tomatoes with cucumber salsa from @noorishbynoor ❤️ This is something I made when the sun was shining and the days were little warmer that they are now. It was a wonderful side with grilled chicken from the bbq. Tomatoes were fried in a pan with olive oil, maple syrup, whole garlic cloves and oregano sprigs. Meanwhile herby cucumber salsa was prepared mixing peeled and diced cucumber with chopped chives, oregano, carpers, cider vinegar, salt and pepper. When tomatoes were ready they were transferred to a serving plate and the cucumber salsa was spooned over. Delicious!
