I used the last mangoes for this season making this Mango and Pistachio Cake. So moist and flavorful it was definitely worth using my last batch!
Here is the recipe:
Ingredients:
260 g flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
180 g butter
120 g sugar
3 large eggs
150 g ground pistachios
1 tsp vanilla extract
1/2 cup milk
250 g sour cream
1 drop green gel food color (optional)
3 medium mangos, peeled and diced
100 ml whipping cream
1 tbsp powder sugar
1 tsp rose water
More ground pistachios and rose petals to garnish
Directions
1- Preheat oven to 170 degrees C. Butter a standard sized baking tin. In a bowl, cream the butter and sugar until pale and fluffy, scrape down the sides and add the eggs one egg at a time, add the vanilla. Continue to beat for 5 min until you get a light and fluffy mixture scraping in between.
2- In a separate bowl sift the flour with all the dry ingredients and add it alternating one time with the milk and another with the sour cream. Combine well.
3- Add the ground pistachio and mix it in the batter, then add the food color of using and mix well until you have an even green color throughout.
5- Pour the batter into your baking tin. Bake for 40 min or until a skewer comes out clean. Let it cool for 20 min, then take it out of the tin and let cool completely.
6- Meanwhile whip the cream with the powdered sugar and rose water. Spoon on top of the cake, then spoon the mango pieces on top. Sprinkle with more ground pistachio and some rose petals. Enjoy!
