This is Drake’s first industry job, he began as a dishwasher but quickly advanced to become our new pasta apprentice. Here he’s making Lumache, a snail shaped pasta currently served Alla Wagyu Bolognese. Fun fact: the ice bath on the left prevents the extruder from getting too hot so the pasta holds its shape better.
