Blackened chicken with caramel and clementine dressing from @noorishbynoor and @ottolenghi soon to be published OTK Extra Good Things. Oh my, this was incredible! I mean that caramel sauce is liquid gold. You can have it with anything and the taste is amazing. Absolutely loved it with spring onions and the very crispy black chicken and as well with fried halloumi. So I’ve made it twice now first with chicken and second with halloumi and definitely will make it again. I loved the chicken which you could think was dry because it was fried until black but it actually wasn’t.
Chicken thighs were marinated with olive oil, fish sauce, turmeric and salt overnight in the fridge. The next day the marinated chicken was first brought to room temperature and then fried on a cas-iron pan for 6-8 minutes until the skin was charred and blackened. While cooking the chicken a heavy weight was placed on the top of the chicken thighs weighing them down to get skin crispier. When the chicken thighs were all ready they were taken out of the pan and trimmed spring onions were added to the pan and fried shortly. Then the chicken thighs were placed on the top of the spring onions and cooked for 8 minutes. Meanwhile the chicken was cooking caramel sauce was prepared by heating a saucepan and adding sugar when it was hot. After the sugar had melted and it was liquid julienned red chilli and ginger were added to it together with fish sauce, rice vinegar and lime juice. The caramel sauce was stirred to combained and left to cool. After short while the peeled and cut clementines were added to the sauce. When the chicken thighs and spring onions were ready the chicken thighs were transferred to a chopping board to rest shortly. When ready to serve the spring onions were placed on a serving plate and cut chicken strips were placed on top of them. Next the caramel sauce was spooned over the chicken and the onions and it was ready to be served. The halloumi version didn’t have any fried spring onions. Instead the spring onions were cut to strips and placed over the fried halloumi and caramel sauce. Super delicious either way! Have a lovely new week everyone! ❤️
