Ricotta dip with hot sauce butter pine nuts from @ixta.belfrage Mezcal. Easy to prepare, delicious to eat and pairs amazingly with almost anything. We had it with roasted potatoes, green salad, grilled bread and chicken. It was a very tasty Sunday lunch!
This one is very fast to put together. First the pine nuts were toasted in the dry pan until nicely browned. Then they were taken off the heat and ghee, olive oil, crushed garlic, hot sauce, smoked paprika powder and salt was added to the pan and left to infuse for 5 minutes. Meanwhile the yoghurt-ricotta dip was prepared mixing peeled and cubed cucumber, lemon zest, crushed garlic, salt, pepper and chopped chives and spring onion. When ready to serve the yoghurt-ricotta mixture was spread on serving plate and topped with Hot sauce butter pine nuts. Delicious! Have a fabulous Tuesday everyone! ❤️
