Replying to @Ruby episode 10 of ‘make it heart healthy’ is an egg in a bell pepper breakfast sandwich with microgreens! a quick and balanced breakfast idea. hope you love it ♥️ recipe (makes 2 serving) 1. crack 2 eggs into a small mixing bowl with 1 tbsp diced red bell pepper, 1 tbsp diced red onion, 1 tbsp low fat feta, 1 pinch of fresh ground black pepper, 1 pinch of red pepper flakes, and whisk together 2. cut a bell pepper crosswise down down the middle into a 1/2” thick circles 3. place 2 bell pepper circles onto a pan over medium heat, and pour half of the egg mixture into each bell pepper circle 4. cover and let cook for 3-5 mins, and then flip each bell pepper egg over and cook for another 3-5 mins until egg is fully cooked 5. toast 2 multigrain english muffins and add 1 bell pepper egg to each one half of each english muffin along with a handful of microgreens 6. add the second half of the english muffin on top to complete your sandwich, and enjoy! nutrition per serving: 185 calories, 12g protein, 20g carbohydrate, 6g fat, 8g fiber, 1.5g sat fat, 279 mg sodium.
