SUMMER MEAL PREP INSPO ☀️
green beans + pesto chicken salad

I’m all about easy meals that require minimal prep time and can be enjoyed cold in the summertime. This week’s meal prep checked all those boxes! I used @rushingtothekitchen pesto chicken salad recipe (on her blog linked and linked below) and paired it with a cold green bean roasted red pepper salad and farro. I typically eat the same meal prepped lunch throughout the duration of the week, so I try to be mindful about incorporating new vegetables/grains each week for variety (thanks for this reminder, @rushingtothekitchen 👏🏻).
👉 method for minimal prep time:
- put farro on the stovetop to cook
- blanch green beans and move them to an ice bath to cool
- assemble chicken salad (chop the onion and mix together the few ingredients; I used the kale cashew pesto from @traderjoeslist for a yummy dairy-free option and rotisserie chicken for the ultimate ease)
- chop roasted red peppers and add to drained, cooked green beans. toss with balsamic, salt, pepper and garlic powder
- assemble! to a base of baby spinach, add green bean salad, chicken salad, and cooked farro. drizzle with balsamic glaze. I drizzled some extra balsamic vinegar before serving 👌 enjoy!
