RECIPE (Made without gluten & dairy):
**makes ~10 pancakes**
-1.5 cups gluten free rolled oats
-2 spotty bananas
-1/2 cup nondairy milk
-2 eggs
-3 scoops @vitalproteins vanilla collagen peptides
-2 tsp baking powder
-1/2 tbsp chai spice (homemade or store bought, could also sub pumpkin spice)
-1 tsp vanilla
-pinch of salt
add all ingredients to a blender and blend for about a minute until smooth. preheat a large skillet over medium heat. add a bit of ghee, butter, vegan butter or oil to the pan. once hot, scoop out 1/3 cup of batter per pancake. let it cook for about 2 minutes or until it begins to get bubbly and fluffy. then, flip and cook until golden on the other side. serve with banana slices & maple syrup if desired!
