Tale of a local melon( moggen)
Just as the rains begin to recede we see a colourful range of fruits and vegetables in our gardens and local markets. This produce is taken from a local grower( pic in the slides)
One such fruit is the musk melon or Moggem as we call it in Konkani. The fruit has got a great aroma. Unlike its family of cousins namely the honeydew or cantaloupe which is firm and sweet in texture, the moggem is generally soft and mushy and requires a catalyst such as sugar or honey with a squeeze of lime for it to be enjoyed best.
Here’s what I’ve done to this humble fruit
Compressed moggem with melon liquor ( this intensifies the flavour) & citrus
Melted Brie, lacquered walnuts & spiced honey chili drizzle
Acts as a great appetiser and in sync to our food philosophy of local heart Global soul
