*Spicy Matooke fritters with a Healthy Twist*
This is a perfect winter snack suitable for the whole family. You can make it as spicy or mild as you like and a great treat for children.
x2/3 Green Matoke Bananas (you can find these in most supermarkets)
x1/2 cup Elephant Medium Atta with added Vitamin D
x1 tsp chopped coriander
x1 tsp garlic powder
x1 tsp salt
x1 tbsp chopped Jalapenos in brine ( you can use any brand)
Fry Light
*The Method*
STEP 1 - Steam the raw Matoke for 20-25mins and allow to cool - These bananas are particularly rich in vitamins B6 and C, fibre, and potassium, among others.
STEP 2- Peel of the skin and grate the Matoke into a bowl, add the coriander, salt, garlic powder and the chopped Jalapenos
STEP 3- To the wet mix, add 1⁄2 cup Elephant Medium Atta with added Vitamin D and bind into a soft dough.
STEP 4- Make 4-6 equal balls and gently shape into a pattie with your hands.
STEP 5- Heat up a hot frying pan or tawa and place the patties. Cook for 4 mins each side and spray some frylight for a lower calorie pattie.
Serve hot with the dipping sauce.
*The dip*
x2 tbsp Hamadaya Teriyaki Sauce
x2 tbsp Tomato puree
x1/4 tbsp salt
*Things to know about Matoke*
