pumpkin oatmeal breakfast cookies šŸŽƒ it’s time you guys...the first pumpkin recipe of the szn! & it’s a gooood one to meal prep for an easy breakfast or snack throughout the week. lots more fall recipes to come but is there anything you want in particular!? šŸ‘€ RECIPE (gluten free, dairy free, refined sugar free): -1 egg -3/4 cup pumpkin purée -3 tbsp oil -2 tbsp maple syrup -1 tsp vanilla -1 cup gluten free oats -1 tbsp chia seeds -1 tbsp ground flaxseed -1/4 cup unsweetened shredded coconut -1/4 cup unsweetened dried cranberries -1/2 tbsp cinnamon* -1/2 tsp ginger* -1/4 tsp cardamom* -pinch of salt *i didn’t have any pumpkin spice at the time, so i used these instead but you could also just substitute for about 1 tbsp pumpkin spice preheat oven to 350F & line a baking sheet with parchment paper. add all wet ingredients to a large bowl and whisk until smooth. then add all the dry ingredients and stir until combined. scoop out 1.5 tbsp of dough per cookie and place onto a baking sheet. flatten with your palm. bake for 18-20 minutes. cookies will be slightly golden on the bottom but still soft. allow to cool completely. enjoy! #munchinwithmaddie #breakfastcookies #pumpkinrecipes #pumpkinspice #fallrecipes #fallbaking #mealprep #oatmealcookies #glutenfreedairyfree #refinedsugarfree #healthycookies #cookwithme #bakewithme #cookingvideos #satisfyingvideos #easyandhealthy
