Laap Muang Moo (Chopped Pork Salad) A northern Thai dish of La na descent or the kingdom of a million rice fields. Made with the coarsely chopped pork from @gothelneyfarmer Tamworth and stir fried with a warming mix of spices which include long pepper, Thai cardamom and mace before being finished with pigs blood, fried garlic and pigs skin. Both rich in flavour and texture served along side bitter and fragrant leaves. @kilnsoho
