While I definitely do not recommend going into the woods and taking a bite out of an Amanita Muscaria mushroom, THESE ones are perfectly edible (and tasty!)... because they're cookies! 🍄 This recipe is not for the "quick and easy" baker. It's more of an art project than just a bake. It takes time to create such life-like and splendiferous mushroom cookies... but oh, is it worth it! Coconut-infused gingerbread cookies get an enlivening boost of flavor from lime icing. The cookie dough tasted so good I even made a raw-safe version to hide inside the crunchy and salty pretzel stalk! It’s truly an adventure to eat one of these beautiful cookie creations. Especially out in the woods in front of your family members who don't know it's just a cookie 😏😈 🍄 I made these last year as part of a collaboration with my partner, who wrote a fantastic fairytale about it and we did a totally magical photoshoot as well!
