Brownie points but make it lemon olive oil cake Recipe: For the cake - 1 cup olive oil - 3 large eggs - 1 1/2 cups granulated sugar - 2 tsp vanilla extract - 1/2 cup, plus 1 tbsp lemon juice - zest from 2 lemons - 2 cups AP flour - 1/2 tsp baking powder - 1/2 tsp baking soda - 1 tsp salt - 1 cup whole milk For the glaze - 2 cups powdered sugar - 3 tbsp lemon juice - 1 tsp vanilla extract Preparation 1. Preheat oven to 350F. Grease and line a 9” cake pan with parchment. 2. In a large bowl add sugar and lemon zest. Rub zest into the sugar to help express oils. Add eggs, olive oil, 1⁄2 cup lemon juice, and vanilla extract, whisk to combine. 3. In a medium bowl whisk flour, baking powder, baking soda, and salt. 4. Alternating with milk, add half of the dry ingredients to the wet and fold in with a rubber spatula. Add in half the milk and combine. Repeat with remaining dry ingredients and milk. 5. 5. Bake for 45-55 minutes until baked through and top of cake is golden brown. 6. Use a skewer to poke holes throughout the cake and evenly pour remaining lemon juice over cake. Let cool and remove from cake pan. 7. For the glaze, whisk powdered sugar, lemon juice, and vanilla extract to combine. Pour over cooled cake, using the back of a spoon to help the glaze cover cake.
