🥞 ELDERBERRY & NETTLE SEED PANCAKES 🥞 ⚠️ Elderberries must be cooked before they’re eaten, so make sure your pancakes are cooking for at least 3 minutes on either side. Some literature says they should be cooked for 45 minutes, I haven’t found this necessary personally, but the safest option would be to make an elderberry syrup for pancakes instead! Dishes like these make my heart SO happy ☀️ THIS is what foraging is about for me. Spending a day in nature, hiking through fields and woodland and foraging small amounts of edible goodies as you go, before taking them back to create something simple and delicious to share with friends! 🥰 We used our foraged finds, ingredients we had in the vans, plus grabbed some flour from Findon Village Shop to make these delicious treats 🤤 There was no measuring to be spoken of on the day but here’s how you can make your own at home! RECIPE: 🫐 Pick the berries from 2 ripe heads of elderberries and add to a bowl. Chop some extra fruit for topping and set aside (we used damsons and blackberries!) 🍯 Add 2 cups of flour, 1 egg, 1/4 cup honey (or sugar) and 1 TBSP baking powder to a bowl and stir to combine 🥛 Add enough milk to make a thick batter (approx. 300ml) and stir! Add your elderberries and nettle seeds 🔥 Heat up a pan with a little oil or butter, add a few spoonfuls of the batter and fry on each side for at least 3 minutes!
