recent meal prep lunches:
- chicken sausages with roasted zucchini, peppers, and sweet potatoes over a bed of kale, sprinkled with feta
- grilled greek marinated chicken with roasted eggplant, homemade taboule, and feta over kale
- burger 🍔 bowls with burger seasoned ground beef, tomatoes, roasted sweet potatoes and brussel sprouts over butter lettuce, served with lots of mustard (if you’re obsessed like me!)
- shrimp with cowboy caviar over arugula, served with avocado
- grilled lemon dijon chicken with vinegar marinated beets, roasted zucchini, and herby red quinoa over kale
- chipotle chicken thighs with roasted broccoli and cilantro lime rice over kale, topped with lots of chipotle hot sauce
- balsamic herb grilled chicken with pesto quinoa, roasted green beans, and tomatoes over arugula
- pasta salad with roasted peppers, zucchini, red onion, and olives tossed in green goddess dressing, served with roasted zucchini and chicken sausage
- herby greek burgers with roasted kabocha squash, tomatoes, and roasted eggplant over arugula, served with tzatziki
- grilled steak, roasted green beans, radishes, vinegar marinated beets, and feta served over kale
