RECIPE BELOW!š„ save share and follow @terianncarty for more easy recipes. This incredibly tasty dal came together in 30 minutes. We used red lentils and moong dal and homemade corn stock for the base. So sooo good!
2-3 tbsp olive oil
1 medium onion diced
1 large clove garlic minced
1 medium eggplant peeled and small cubes
2 tbsp tomato paste
1 tsp each cumin, curry powder
1/2 tsp ground coriander, turmeric and Aleppo chili
4 cups veggie stock
2 1/2 cups mixed red lentils and moong dal
Handful fresh cilantro rough chopped
1 tbsp lemon juice
4 cups kale
Handful cherry tomatoes halved
Sea salt cracked pepper to taste
SauteĢ onion, garlic and eggplant until it starts to soften, add spices, tomato paste cook for 1-2 minutes. Add in pulses, cherry tomatoes and broth, cover and simmer for 30 minutes. Add more broth or water if necessary. Add in kale, season well with salt and pepper.
