Testing grouse from @swaledalebutchers today @kilnsoho Glazed with a mix of palm sugar, Karen chillies, fermented fish and oyster sauce and served with red currents. This Issan tare was introduced to us by @chaleekader and @num_samuay at our recent event which works really well with these birds a flavour often found amongst laap street vendors in Thailand.
