CINCO DE MAYO VEGETARIAN JACKFRUIT ENCHILADAS
yes, yes I did bring my @june oven with us to the #cabin because that’s how we roll.
i’m so obsessed w/ our daily routines and was a little concerned about the food we’d be able to eat while away from home, but the June oven was basically like bringing our kitchen with us! absolutely zero compromises 😃
you have to try these #vegetarian #jackfruit enchiladas!!! easy to put together and super quick to bake - and perfect for #cincodemayo!
INGREDIENTS:
wheat/corn tortillas
2 cans jackfruit
1 can crushed or diced tomatoes w/ juice
1 can diced green chilis (optional)
6oz tomato paste
1c Mexican cheese blend
1 can enchilada sauce (mild-spicy, your choice!)
1-2 jalapeños
4 green onions
1 bunch cilantro
1-2 limes
spices (cumin, paprika, cayenne, oregano, sage)
sea salt
Once you assemble the enchiladas, bake them for 12-15 minutes, until the cheese is melted and bubbly, NOM.
NOTE* on tortillas: we typically avoid wheat flour, but the enchiladas are much easier to fold with flour tortillas. I found this amazing flour/corn tortilla blend (12 tortillas) @traderjoes for $2.99 [and they were DELICIOUS]
if you want to avoid it completely, @sietefoods has some amazing flour replacement options like cauliflower, #cassava, etc. i'm not sure how they ROLL, but if you try it, please let me know! x
