💚🌮 VEGAN JACKFRUIT CARNITAS TACOS 🌮💚 the shredded #jackfruit does such a great job of pretending to be pork! plus, it soaks up all the spices and flavor while it simmers. have you tried jackfruit?? INGREDIENTS: 20oz can green jackfruit 2tbsp tomato paste 1tbsp minced garlic 10oz can diced tomatoes + juice 1/2-1c vegetable broth 1/2c cheese (or vegan cheese) 1 jalapeño, diced 1/2 white onion, diced 4 green onions 1/2c cilantro 6 corn tortillas 1/2c green cabbage 3-4 radishes, thinly sliced & halved 1-2 limes 1 avocado 1tsp-1tbsp each of the following: cayenne pepper, chili powder, ground cumin, paprika, oregano 1) rinse & drain jackfruit. once dry, shred with hands or QUICKLY pulse in food processor. set aside. slice green cabbage & radishes, then add to a bowl w/ 1/4c white vinegar, 1/4c filtered water & 1/4tsp sea salt. cover w/ plastic wrap and set aside. 2) add 2tbsp EVOO to skillet. once warm, sauté the garlic, jalapeño, white/green onion on medium-high heat until fragrant and barely tender (2-3 minutes) 3) add tomato paste, diced tomatoes, broth, jackfruit & all spices to pan. mix well, reduce heat to medium-low and let simmer for 10-15 minutes, stirring occasionally. add lime juice at end. 4) meanwhile, top your tortillas w/ cheese and pop em in the oven at 350 for 5-6 mins 5) add jackfruit carnitas to tortillas & top w/ cabbage, radish, cilantro, with a side of avocado and another squeeze of lime, if desired ENJOY, xo #veganeats #jackfruitcarnitas #jackfruittacos #eattherainbow #glutenfreerecipes #veganrecipes #beautifulfood #tacotuesday #nsng #metabolichealth #longevity #foodasmedicine #buzzfeedfood #instafood
