Making my Popo’s Peanut Butter French Toast in her kitchen 🥹 (recipe below!) I haven’t been back to HK in a few years, feels really special to be able to be in my Popo’s space and feel a little closer to her. PB French Toast Recipe (Makes 2): Ingredients - 6 slices milk bread (brioche or white bread works too) - Smooth peanut butter (I always use skippy) - 3 large eggs - 1/4 cup whole milk - 1/2 tsp kosher salt - Neutral oil - Salted butter, for serving - Condensed milk, for serving Preparation 1. Lay out three pieces of bread on a cutting board. Very generously spread peanut butter over two slices and stack bread on top of each other to make a sandwich, finish with plain slice on top. Repeat with reaming bread. Cut the crusts off all sides. 2. In a shallow dish whisk together eggs, milk, and salt. Set aside. 3. Fill a large pan with enough oil to go 2” up the sides, heat over medium-high heat. You will know the oil is hot enough when you stick a wooden chopstick or spoon in and bubbles form around it. 4. Working one stack at a time, soak all sides of the french toast in the egg mixture until bread is well saturated. 5. Carefully place french toast into the oil and fry until all sides are golden brown, 1-2 minutes per side. Make sure to rotate the toast and fry the sides as well. Transfer to a plate and repeat with second stack. 6.
