Let’s make a Berry Caramel Sheet Cake 🍓🍰 A light, fluffy and tender berry caramel cake topped with super light oat whipped cream, more caramel and berries – who fancies a slice? . This cake is the ULTIMATE way to celebrate the end of the berry season! Berry Caramel Sheet Cake 🍓🍰 ⭐︎toss 150g mixed berries with 1 tsp flour ⭐︎whisk together 100g thick coconut yoghurt + 60g mashed banana or applesauce + 60g coconut or caster sugar + 2 tbsp maple syrup + 60g smooth peanut butter + 60ml Natures Charm Evaporated Oat Milk + 1 tbsp lemon juice + 1 tsp vanilla essence till smooth ⭐︎add in 1 tbsp ground chia/flaxseed + 150g sifted plain/GF flour + 100g oat flour + 1⁄2 tsp bicarbonate of soda + pinch of salt. Stir to a thick batter ⭐︎fold in the berries. Pour into a lined 8-inch tin then smooth over the top ⭐︎swirl on 2 tbsp Coconut Caramel Sauce + bake at 160Fan/180*C for 22 mins (or until an inserted skewer comes out clean) ⭐︎cool fully on a wire rack ⭐︎whip up 300ml Oat Whipping Cream (previously chilled overnight) with 1⁄2 tsp vanilla essence + spread over the cake ⭐︎top with more caramel + fresh berries + desiccated coconut ⭐︎cut yourself a BIG SLICE and dig in . p.s. extra caramel sauce is optional but HIGHLY recommended.
