Pistachio & Dark Chocolate Chip Cookies 🍪 When it comes to cookies.. I’m a bit like Goldilocks, I don’t like them too thin and I don’t like them too thick. But these Small Batch Pistachio Chocolate Chip are just right They are really simple to make and super versatile. If you don’t like Dark chocolate and pistachios (can we even be friends anymore?) Feel free to change out what ever mix-ins you prefer, just keep the weight the same. Unlike a lot of other cookie recipes, you can bake them right as you get done balling them. Ingredients 120g unsalted butter 100g caster sugar 59g light brown sugar 1 teaspoon vanilla 1 egg 190g plain flour 1/2 teaspoon baking soda 1/4 teaspoon salt Pinch of flakey salt 209g 70% dark chocolate (6 pieces reserved) 50g shelled pistachios Method Preheat the oven to 180. Place the butter and both sugars into a bowl and cream with an electric hand mixer. Scrape down the sides to make sure it’s totally combined. Add the egg and vanilla and beat until fluffy Add the flour, bicarbonate of soda, and salt, and mix until just combined. Fold in the chocolate and pistachios (reserving a few of each for the topping. Split into 6 balls (the dough should weigh about 600g so each ball should be about 100g of dough). Place the balls on a parchment-lined baking tray allowing for room to spread. Garnish with the reserved chocolate and pistachios and a sprinkle of flakey salt. Bake in the oven for about 10-12 minutes until the edges are golden.
