Not your traditional fall meal but a warm flavorfull bowl nonetheless. I love me some ramen, thanks to hubby's addiction lol. And I have been experimenting in the kitchen with these deliciously healthy jade pearl noodles from @lotusfoods Came up with red curry paste mussle soup. Ingredients 1/2 onion 1/2 tbsp Red curry paste from @thaikitchen Sea salt Garlic powder Smoked paprika 1/2 cup Vegetable broth 1/4 cup Coconut milk Mussels. I got mine from @wildforkfoods Squeeze of lemon Dash of oregano Your gonna sauté your onions, add the past and all the seasonings. Add broth and bring to a boil. Add mussels, and coconut milk and simmer until they open. Taste and adjust seasonings if need be. Top your cooked noodles with broth and mussels and finish off with a squeeze of lemon and a dash of oregano.
