Lemon Dijon Chicken with Zucchini & Squash 🍋🌿
Juicy grilled chicken in a zesty lemon Dijon marinade, served with tender, herb-seasoned zucchini and yellow squash. healthy, flavorful, and perfect for summer grilling.
🛒 You’ll Need
For the Chicken:
• 2 large chicken breasts
• Juice of 1 lemon
• 3 tbsp olive oil
• 1 tbsp Dijon mustard
• 2 tbsp fresh parsley, chopped
• 2 tsp honey
• 2 garlic cloves, minced
• 1⁄2 tsp salt
• 1⁄4 tsp black pepper
For the Veggies:
• 2 medium zucchini
• 2 medium yellow squash
• 2 tbsp olive oil
• 1⁄2 tsp dried basil
• 1⁄2 tsp garlic powder
• 1⁄2 tsp dried oregano
• 1⁄4 tsp crushed red pepper flakes
• 1⁄2 tsp salt
• 1⁄4 tsp black pepper
Or.... Use @salt_sisters farmhouse blend... so good!
☀️How to Make:
1. In a bowl, whisk lemon juice, olive oil, Dijon mustard, parsley, honey, garlic, salt, and pepper. Add chicken, coat well, and marinate for at least 10 minutes (or up to 4 hours).
2. Score zucchini and squash lengthwise (this just means making shallow cuts on the surface so the seasoning soaks in), then in a small bowl mix olive oil, basil, garlic powder, oregano, red pepper flakes, salt, and pepper. Brush generously over vegetables.
3. Preheat grill to medium-high heat. Grill chicken 6–7 minutes per side until fully cooked. Grill zucchini and squash 3–4 minutes per side until tender and charred.
4. Slice and serve immediately. I love to top it with an extra squeeze of lemon.
