Time to bake Caramel Apple Cinnamon Cupcakes 🧁🍎 Cosy, warming and delicious cinnamon apple cupcakes with a homemade caramel middle, fluffy cinnamon buttercream and caramel apples – who wants one? . These cupcakes are the epitome of COSY SZN they are warming, lightly spiced, packed with apples and gooey caramel and are so easy to make thanks to my brand-new Splash Electronic Kitchen Scales from @salteruk [ad] which are wipe clean for all those messy bakers 👩🏻‍🍳 (myself included!!) . These cupcakes are so moreish and warming and are made with wholesome, vegan and gluten-free ingredients, making them a WINNER for apple season . Here’s the recipe to SAVE for your next apple baking session 👆🏻 . Caramel Apple Cinnamon Cupcakes 🧁🍎 ⭐︎for the cupcakes: whisk together 2 tbsp ground chia/flaxseed with 6 tbsp water. Leave for 5mins to thicken. In a large bowl, weigh out then whisk together 200g applesauce + 150g thick dairy-free yoghurt + 60g smooth almond butter + 60ml olive or sunflower oil + 100g coconut sugar + 1 tbsp lemon juice + 1 tsp vanilla essence + chia gel ⭐︎sift together 280g plain or GF plain flour + 1 tsp cinnamon + 1 tsp baking powder + 1⁄2 tsp bicarbonate of soda + add a pinch of salt.
