VEGAN SUN-DRIED TOMATO CREAM SAUCE. You need this recipe, save and share this cause your friends need it tooš
SAUCE
2 tbsp olive oil
Pinch chili flakes
1/2 onion diced
2 large cloves garlic divided
1/2 cup cashews soaked overnight
1/2 cup sun-dried tomatoes in oil rough chop
1 medium red tomato rough chop
1 heaping tsp Dijon mustard
3 tbsp nutritional yeast
1/2 cup canned butter beans
Juice of 1/2 lemon
1/4 cup fresh basil leaves
2 cups hot pasta water (divided-you wonāt need all of it)
Sea salt cracked pepper to taste
PASTA
2 tbsp olive oil
1 cup small yellow chanterelle mushrooms (any š will do)
Remaining garlic
Remaining can of beans
For the sauce: heat oil and chili flakes. SauteĢ onion and garlic, transfer to a blender. Add ingredients for sauce except for water. Turn blender on high and slowly add hot water until you achieve a creamy pourable consistency. Reserve that water for the pasta!
Heat oil in same pan, add mushrooms and garlic. SauteĢ for a couple minutes, add in remaining beans and pasta. Toss toss. Add in sauce and gently toss together adding in more pasta water if itās too thick. Serve immediately.
