Stop being so pithy 🍊😏 But seriously, it just depends how you’re using your citrus peels. Making a citrus infusion or syrup of some kind? Avoid the pith to avoid unwanted bitterness. Making twists and garnishes? The pith will help your twists maintain their shape (vs. unwinding instantly and looking all sad). You’ll also get more oil in a thicker peel, allowing you to express those aromatic citrus oils onto the surface of your drink.
