lemon chicken orzo soup recipe below✨ Starting my healthy & easy dinner series off with this lemon chicken orzo soup! It’s EXTREMELY quick and easy to make, but also has tons of flavor and so comforting. You guys will truly love this so much, give it a try if you need a new dinner idea! Serves 2-3 Ingredients: -1 yellow onion diced -2 carrots chopped -2 celery chopped (I left out cause I don’t like) -1 tbsp butter -1 tbsp olive oil -3 garlic cloves minced -2 tbsp flour -6 cups chicken broth -1/2 tsp salt, pepper, Italian seasoning each -1 cup orzo -2 cups chicken (I use rotisserie because it’s SO easy but you’re more than welcome to make it yourself and shred it will just take longer :) ) -fresh lemon juice -parsley for topping Instructions: 1. Chop your veggies and shred your chicken. Heat your butter and olive oil on medium high heat in a large pot. Add in your onion & carrot. Cook for 5 minutes until onion is translucent. Add in your garlic and cook for 30 seconds until fragrant. 2. Add your flour. Mix immediately then slowly pour in your chicken broth while mixing to prevent clumping. Add your spices and bring to a boil on medium high heat. 3. Pour in your orzo. Cook for 8-10 minutes until the orzo is soft mixing occasionally. Simmer and add in your chicken.
